Swiss Chard Au Gratin

From Heirloom Living Market Lilburn

Being new to swiss chard I searched the internet for a recipe. This one was on YouTube and won me over. It has become my ‘Go To’ recipe for swiss chard. One of the ingredients is anchovies, of which I am not a fan, but I felt adventurous. The anchovies dissolve into the other ingredients and there is NO anchovy fishy flavor. It leaves a depth to the finished product that is only recognizable as delicious! I am posting the shortcut version; both are good. You decide which you would rather prepare.

Swiss Chard Saute

From The Wednesday Market

Try this unusual vegetable.
The leaves cook like spinach and the stalks cook and crunch like celery. Chard has an earthy flavor similar to beets. The New Zealanders call this ‘Silverbeet’. Enjoy!
Vegetarian!

Tacos de Quelites — Tacos of Garlicky Greens

From Athens Locally Grown

There are lots of recipes out there for “authentic” Mexican spinach quesadillas and similar dishes out there. Few of them will tell you, however, that none of those dishes were traditionally made with spinach. It’s a cool weather crop that has trouble growing here in Georgia, much less in the more arid and hot climates further south. What does grow well, both here and there, is the even more nutritious Lamb’s Quarter, and this is what modern recipes replace with spinach.
Vegetarian!
