Zucchini Soup

<p>A friend gave me this recipe after discovering that her &#8220;picky eater&#8221; asked for seconds. I had a bumper crop of zucchini that year and anything containing it was all right by me.</p>

Ingredients
1 lb italian sausage bulk or link (casing removed)
2 cups celery 1/2 inch slices
1/4 cup water
3 lbs zucchini, sliced 1/2 inch thick
1 cup onion chopped
2 28 oz. cans tomatoes or equivalent fresh
1 teaspoon sugar
1 teaspoon Slow Dog Italian Seasoning
1 teaspoon Slow Dog Oregano
1 teaspoon Slow Dog Basil
1/2 teaspoon garlic powder
2 teaspoons salt
2 green bell peppers in 1/2 inch pieces

Step by Step Instructions
  1. Brown sausage in large pan. Add everything else except green pepper. Add more water if necessary. Simmer covered for 20 minutes.
  2. Add green peppers and cook another 10 minutes or until done.
