Curried Squash Soup

Vegan!

Ingredients
4 Cups cooked and pureed winter squash
4 Cups vegetable stock
2 teaspoons Curry Powder
2 teaspoons Garlic Powder
2 teaspoons Onion Powder
1 teaspoon Salt

Step by Step Instructions
  1. Choose your favorite winter squash (I like Hubbard) cook, cool, peel and puree in your food processor or with a hand blender. You'll need about 4 cups of pureed squash. Place in a large saucepan.
  2. To the squash, begin adding the vegetable stock one cup at a time, stirring and adding more stock until you reach the desired consistency. Add the curry, garlic, onion powder and salt. Heat over medium low heat until hot and bubbly.
  3. Ladle into serving bowls and enjoy. Serving Suggestions: Top each bowl with a dollop of sour cream, crumbled bacon bits, or swiss cheese.
