Spicy Winter Squash Soup

<p>Creamy smooth pureed soup w/ the incredible combination of sweet winter squash, coconut milk and cilantro. A hearty meal w/ a dense crusty bread!</p>

Serves: 4 servings
Vegan!

Ingredients
1 onion, chopped
1 red pepper/chili, de-seeded and chopped
1 garlic clove, crushed
1 butternut or buttercup squash, peeled and cubed
1 tsp curry powder (more to taste)
4 cup vegetable stock/broth (more as needed)
2 Tbsp cilantro, chopped (can't have too much)
1 cup coconut milk

Step by Step Instructions
  1. Saute onion in olive oil over low heat until soft; add pepper/chili and garlic. Add squash, vegetable stock and curry. Bring to boil and simmer 10-15min. Transfer to food processor or blender in batches and blend until smooth. Return to large pot. Add coconut milk and cilantro and gently heat before serving.
