Strawberry and Spring Onion Salad

<p>A strange-sounding recipe that is really very good. The savory dressing with mustard and dill highlights the sweetness of perfectly ripe strawberries.</p>

Serves: 4 to 6 (makes 3 cups of salad)
Vegan!

Ingredients
1 T. champagne vinegar or white wine vinegar
2 tsp. snipped fresh chives
2 tsp. Dijon-style mustard
to taste salt (about 1/4 tsp.) and pepper (about 1/8 tsp.)
1/4 tsp. snipped fresh dill
3 T. olive oil
1 lb. fresh strawberries
2 bunches green onions, thinly sliced

Step by Step Instructions
  1. In a small bowl, combine vinegar, chives, mustard, salt, dill, and pepper. Whisk in the olive oil to form an emulsion.
  2. Hull the strawberries and slice them 1/4 inch thick.
  3. In a medium bowl, combine strawberries and onions. Toss with dressing. Serve immediately.
