Sautéed Shiitake Mushroom Sandwich

Vegan!

Ingredients
2 slices of Thickly cut bread
1 tablespoon Coconut oil (plus a bit more for the bread)
4 ounces Shiitake mushrooms
1 tablespoon Water
1/2 cup Arugula
1/2 of an Avocado (sliced or mashed)
1 teaspoon Sriracha
1 teaspoon Vegan mayo
Seasonings to taste

Step by Step Instructions
  1. Heat the coconut oil in a small skillet over medium heat. Add the mushrooms and water and saute for 3 to 5 minutes. Season to taste.
  2. Toast the bread to desired crispness, and spread both slices with coconut oil. Mix the vegan "mayo" and the sriracha together in a small bowl until well combined.
  3. Layer the sandwich: bread slice, arugula, avocado, mushrooms, Sriracha mayo, bread slice.
