Roasted Jerusalem Artichokes

Vegan!

Ingredients
1 pound Jerusalem artichokes (cleaned, skin on, chopped into 1 inch pieces)
2 tablespoons Olive oil
Salt & Pepper to taste
1/4 teaspoon Garlic powder
1 tablespoon Minced fresh parsley leaves

Step by Step Instructions
  1. Preheat oven to 400 degrees and spray or brush a baking pan with olive oil.
  2. Toss the Jerusalem artichokes, olive oil, salt, pepper, and garlic powder together in a bowl to ensure they're coated.
  3. Put the Jerusalem artichokes onto the baking sheet and roast them for 17 to 20 minutes. Serve garnished with parsley.
