Savory Waffles with Bourbon Seafood

Ingredients
5 Eggs (separated)
2 ounces Grated Parmesan cheese
1 cup Milk
1/2 teaspoon Salt
1/2 teaspoon Pepper
2 cups Flour
4 ounces Butter (melted, divided)
2 Shallots (minced)
1 pound Large shrimp
8 ounces Scallops
1 1/2 cups Honey
OR maple syrup
2 ounces Bourbon
1 or 2 teaspoons Lemon juice
2 tablespoons Chives (snipped)

Step by Step Instructions
  1. Whisk the egg yolks and Parmesan together, then whisk in the milk and salt. Whisk in the flour, and once the mixture is smooth stir in 2 ounces of melted butter.
  2. Beat in the egg whites and salt. Fold this mixture into the Parmesan mixture, then let stand for 1 hour.
  3. While the mixture sits, saute the shallots in the remaining butter. Once they are soft, add the shrimp and scallops and cook for 1 or 2 minutes.
  4. Mix the honey or syrup with the bourbon and lemon juice in a bowl (add additional seasonings to taste). Add the mixture to the skillet with the seafood and let simmer for 1 or 2 minutes. Stir in the chives
  5. Pour batter into a waffle maker, cook as desired, then top the waffles with the seafood mixture.
