Microgreen Frittata (for 1)

Ingredients
1/4 cup Microgreens (chopped)
1 large Egg
2 Egg whites
2 teaspoons Milk
2 tablespoons Grated hard cheese (divided)
Seasonings to taste
Oil to grease the dish
OR butter to grease the dish
Topping suggestions include:
Sauteed peppers
Crumbled bacon
Caramelized onions
Sauteed mushrooms
Chipped ham
Smoked salmon
Sliced green onions
Cut-up sausages
Spinach

Step by Step Instructions
  1. Place a 1-cup ramekin (or heatproof dish or mug) onto a baking sheet and into the oven. Heat oven to 425 degrees.
  2. Whisk the egg, egg whites, 1 tablespoon of cheese, and milk together. Add salt, pepper, and/or other seasonings of choice. Stir in the microgreens.
  3. Remove the warmed dish from the oven and carefully apply the oil or butter. Pour in the egg mixture and top with the remaining cheese (and any other stuff you may care to add)
  4. Bake for 15 minutes, then enjoy!
