Spiced Sweet Potato Chowder

Vegan!

Ingredients
1 pound Potatoes (peeled & cubed)
1 pound Sweet potatoes (peeled & cubed)
2 medium sized Carrots (sliced)
2 medium sized Beets (peeled & cubed)
2 32 ounce cartons Vegetable broth
2 cups Dried lentils (rinsed)
2 teaspoons Paprika
1 teaspoon Nutmeg
1 teaspoon Cinnamon
1/2 teaspoon Cardamom
1/2 teaspoon Allspice
2 cups Coconut milk

Step by Step Instructions
  1. Put everything but the coconut milk into 1 6 quart slow cooker. Cover and cook on low for 5 to 6 hours.
  2. Stir in the coconut milk, then serve.
