Mediterranean Lamb Bowl with Tzatziki sauce

Ingredients
1/2 pound Ground lamb
2 cloves Garlic (minced)
1/2 teaspoon Thyme
1/4 teaspoon Oregano
Salt & Pepper to preference
1 cup Grape tomatoes (sliced)
OR of sufficiently cut larger tomatoes
1/3 cup Onion (diced, preferably red)
1 cup Cucumber (sliced)
FOR THE TZATZIKI SAUCE
1/3 cup Coconut milk
1/3 cup Mayonaise
3 tablespoons Lemon juice
1 cup Cucumber (sliced)
3 cloves Garlic
3 Mint leaves
2 teaspoons Fresh dill
Salt & pepper to taste
FOR THE CAULIFLOWER:
dash of Olive oil
12 ounces Cauliflower rice
OR 1 head of cauliflower (crumbled)

Step by Step Instructions
  1. Cook the lamb in a skillet for 2 to 3 minutes, add the garlic, thyme, oregano, salt, and pepper, then stir to combine. Cook until the lamb is browned.
  2. Blend all of the ingredients in the tzatziki sauce section in a blender until the mixture is smooth.
  3. Cook the cauliflower rice/crumbled cauliflower in either the microwave or in a skillet with a dash of olive oil
  4. Assemble your lamb bowl starting with the cauliflower as a base, followed by the ground lamb, then the tomatoes, cucumbers, onions, and finally top with the tzatziki sauce.
