Cheese-Stuffed Figs Dipped in Chocolate

Serves: 20 figs
Vegetarian!

Ingredients
20 Ripe figs
1/4 cup Cream cheese
OR ricotta
5 ounces Dark chocolate (chopped)
1/3 cup Toasted nuts (chopped)

Step by Step Instructions
  1. Clean & dry the figs. Cut a small gap on one side of the fig near the bottom. Stuff the hole with 1/2 a teaspoon of cheese and pat it smooth. Repeat until all the figs are stuffed, then chill the figs for at least 30 minutes.
  2. Meanwhile, put the dark chocolate into a stainless bowl set in a skillet of near simmering water. Stir frequently until nearly all of the chocolate has melted, then remove the bowl and stir until all of it has melted.
  3. Line a baking sheet with wax paper. Remove the figs from the fridge and gently pat the them with a paper towel to assure they are dry.
  4. Dip the fig into the chocolate, allow any excess chocolate to drip back into the bowl, then sprinkle with chopped nuts. Repeat until all figs are covered. Refrigerate until ready to serve.
