Mediterranean Chard Salad with Lemony Dressing

Serves: 4


Ingredients
4 to 6 cups Chard (cut into small pieces)
1 Bell pepper (thinly sliced)
4 Radishes (sliced)
1/2 of 1 Cucumber (sliced)
6 Cherry tomatoes (sliced)
OR a whole tomato diced into small pieces
1 Avocado (sliced)
1/4 cup Olives
1 cup Cooked chickpeas
1/2 cup Cilantro
OR basil
OR mint
1/4 cup Slivered almonds for topping
Sprouts for topping
Crumbled feta for topping
FOR THE DRESSING:
2 tablespoons Lemon juice
1 teaspoon Lemon zest
1 or 2 Garlic cloves (finely grated)
1 teaspoon Honey
1/4 cup Olive oil
Salt & Pepper to taste

Step by Step Instructions
  1. Place the chard, pepper, radishes, cucumber, tomato, avocado, olives, chickpeas, and the herb of your choice into a bowl and toss the ingredients together until they are well combined.
  2. Whisk all the dressing ingredients together in a separate bowl. Pour it over the salad.
  3. Top the salad with salt, pepper, and more lemon if desired. Sprinkle the almonds, sprouts, and feta over the top of the salad.
