Hearty Vegetable Stew

Ingredients
3 tablespoons Olive oil
1 Onion (diced)
2 stalks Celery (thinly sliced)
2 Carrots (thinly sliced)
6 cloves Garlic (minced)
Pepper to taste
1 tablespoon Fresh rosemary (finely chopped)
1 tablespoon Fresh thyme (finely chopped)
1 tablespoon Fresh sage (finely chopped)
1/4 cup Flour
1/4 cup White wine
4 cups Vegetable broth
2 cups Sweet potato cubes
4 Small potatoes (cubed)
2 tablespoons Tomato paste
1 tablespoon Soy sauce
1 tablespoon Nutritional yeast
1 teaspoon Liquid smoke
1 teaspoon Marmite
1 cup Peas
2 tablespoons Red wine vinegar
Salt to taste

Step by Step Instructions
  1. Add the oil to a pot over medium heat, then once heated add the onion, celery, and carrot. Cook for about 8 minutes, stirring occasionally. Add the garlic, pepper, and fresh herbs. Cook for 2 more minutes.
  2. Coat the vegetables in the pot with flour, then cook for about a minute, stirring constantly. Slowly add the white wine and vegetable broth, still stirring constantly.
  3. Add the the potato, sweet potato, tomato paste, soy sauce, nutritional yeast, liquid smoke, and marmite to the pot. Bring the stew to a boil, then reduce it to a simmer
  4. Cook the stew uncovered for 20 to 30 minutes, then add the peas and vinegar and cook for 5 minutes more. Serve hot!
