Ingredients
1 3/4 cups Flour
2 teaspoons Baking powder
1/2 teaspoon Baking soda
2 tablespoons Brown sugar
1 teaspoon Salt
1 teaspoon Cinnamon
1/4 teaspoon Ground nutmeg
1/4 teaspoon Ground ginger
1 3/4 cups Buttermilk
3/4 cup Sweet potato puree
2 Eggs
1 teaspoon Vanilla extract
Butter for cooking and serving
Toasted pecans for serving (optional)
Maple syrup for serving (optional)

Step by Step Instructions
  1. Whisk together the flour, baking powder, baking soda, brown sugar, salt, cinnamon, nutmeg, and ginger. Set this bowl aside
  2. In a separate bowl, whisk together the buttermilk and sweet potato puree, then add eggs and vanilla. Add the flour mixture to the sweet potato mixture and stir until combined.
  3. Cook the pancakes in a buttered skillet for about 3 minutes each side. Serve topped with butter, pecans, and/or maple syrup.
