Homemade Beef Stock

<p>This recipe is a great way to make stock for cooking if you find that prepackaged store bought stock is, well, out of stock! Though it does take longer to cook and prepare, you&#8217;ll likely find it&#8217;s far more flavorful and healthier since you&#8217;ll have direct control over its ingredients. Serves: About 2 quarts


Ingredients
6 lbs Lean shin bones and marrow bones
1/4 teaspoon Black pepper
6 whole Cloves
1 Bay leaf
1 teaspoon Thyme
3 sprigs Parsley
1 Diced carrot
3 ribs Diced celery
1 cup Drained tomatoes
1 Diced onion
1 Diced turnip

Step by Step Instructions
  1. Cut bones into pieces and brown them in a 350 degree oven. Place them in a large pot with 4 quarts of cold water.
  2. Slowly bring the bones to a boil, then reduce the heat and allow it to simmer uncovered for about 30 minutes. Remove any scum that forms and add the pepper, cloves, bay leaf, thyme, parsley, carrot, celery, tomato, onion, and turnip.
  3. Bring the mixture to a boil and have it simmer whilst partly covered for at least 6 hours.
  4. Strain the stock. Cool uncovered and refrigerate covered.
