Dilly Poached Salmon

Ingredients
your choice filets salmon
1 lemon, sliced thin
1 Tbsp dill seed
6 peppercorns
2 tsp salt
4 cups water
2 cups sour cream or Greek yogurt
1 bunch fresh dill
1/4 tsp salt

Step by Step Instructions
  1. combine lemon, dill seed, peppercorns, 2 tsp salt and water in a skillet. Boil together for 10 minutes, then add salmon filets.
  2. Cook only a few minutes until salmon loses its transparency and flakes easily. Time will vary according to the thickness of the filets.
  3. Remove salmon and chill, covered.
  4. Combine sour cream (or yogurt), fresh dill and salt to taste. Add dash of lemon juice if desired.
  5. Serve salmon topped with dilly sauce. Add a green salad and you have an elegant meal.
